Haitian Coffee: What It Tastes Like, Why It Tastes That Way, and How to Brew It
Posted by Figaro Cafe Mystic on 20th Oct 2026
If you've searched for Haitian coffee, you've probably heard two things: it's hard to find, and once you've had it, nothing else tastes quite the same. Both are true — and both come from the same place: Haiti's mountains.
What makes Haitian coffee different?
Haiti grows coffee the slow way. Our Figaro Cafe Mystic beans are Haiti Typica — one of the oldest coffee varieties in the Americas — grown at over 1,200 meters in the Haitian highlands. At that altitude, coffee cherries ripen slowly, and slow ripening means denser beans, deeper sugars, and a cup with real character instead of flat bitterness.
Then comes the roast. In Haiti, coffee has traditionally been roasted by hand, over fire — small batches, turned constantly, watched by eye and by nose rather than by a timer. That's how we still do it. Every batch of Figaro Cafe Mystic is hand-roasted in Haiti, in small quantities, so the roast stays a craft instead of becoming a factory setting.
So what does it actually taste like?
Bright first, then smooth. A deep, full aroma before the cup even reaches your lips — that's the Air. A grounded, rich body from the highland soil — that's the Earth. The transformation of the roast itself — that's the Fire. And the extraction that carries it all forward — that's the Water.
Our whole brand is built on those four elements, because they're not a metaphor. They're literally the four steps between a cherry on a mountainside and the cup in your hands.
Expect a cup that is:
- Aromatic — the fragrance hits first and lingers
- Smooth, not harsh — low bitterness when brewed right
- Full-bodied — it tastes like coffee used to taste
How to brew it
Haitian coffee rewards a little patience:
- Fresh water, just off the boil — boiling water scorches the grounds.
- Two tablespoons per cup — this coffee has presence; don't under-dose it.
- Give it a moment — let the grounds bloom for 30 seconds before the full pour. That first fragrant moment is part of the ritual.
- Drink the first cup plain — no sugar, no milk. Learn what it actually tastes like. Dress the second cup however you like.
Is Haitian coffee strong?
It's full-flavored, not harsh. The strength people remember isn't bitterness — it's depth. If your usual coffee tastes thin or burnt, the difference will be obvious from the first sip.
